Slow Cooker Bean-Thickened Vegetable Recipes

Ingredients:

  • 1.5 cups Basic Vegetable Stock or vegetable broth
  • 1 can (15 ounces) each: rinsed drained black and puréed navy beans
  • 2 cups chopped tomatoes
  • 11⁄2 cups sliced mushrooms
  • 1 yellow summer squash, sliced
  • 1⁄2 cup each: sliced carrots, chopped onion
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 3⁄4 teaspoon each: dried thyme and oregano leaves
  • 1 cup frozen peas, thawed
  • Salt and pepper, to taste
  • 4 cups cooked noodles, warm

Instructions:

  1. Combine all ingredients, except peas, salt, pepper, and noodles, in slow cooker;
  2. Cover and cook on high 4 to 5 hours, adding peas during last 15 minutes.
  3. Discard bay leaves;
  4. Season to taste with salt and pepper.
  5. Serve over noodles
