Slow Cooker Bourbon Street Soup Recipes

Ingredients:

  • Water-1 quart
  • Lean beef stew meat, cubed (1-inch)-1 pound
  • Diced tomatoes – 1 can (28 ounces)
  • Stewed tomatoes-1 can
  • Chopped onions-1.5 cups
  • Chopped green bell pepper-3⁄4 cup
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme leaves
  • Crushed red pepper-1/4–1⁄2 teaspoon
  • 1 bay leaf
  • Uncooked converted long-grain rice-1⁄3 cup
  • Whole kernel corn, sliced fresh or frozen thawed okra-1.5 cups
  • Salt and pepper, as required
  • Hot pepper sauce, to taste

Instructions:

  1. Combine all ingredients, except rice, corn, okra, salt, and pepper, in 6-quart slow cooker.
  2. Cover and cook on low 6 to 8 hours, adding rice during last 2 hours and corn and okra during last 30 minutes. Discard bay leaf;
  3. Add Salt and pepper hot pepper sauce,as required .
