Slow Cooker Paella  Recipes

Ingredients:

  • 8 ounces chicken tenders, halved
  • 3 ounces Canadian bacon, cut into thin strips
  • 2.5 cups reduced-sodium fat-free chicken broth
  • 1 can (141⁄2 ounces) Italian-style diced tomatoes
  • 1 can (143⁄4 ounces) artichoke hearts, drained, halved
  • 1 cup each: chopped onion, red and green bell pepper
  • 2 cloves garlic, minced
  • 3⁄4 teaspoon each: dried thyme and basil leaves
  • 1/4teaspoon crushed saffron threads (optional)
  • Uncooked converted long-grain rice
  • 8 ounces medium shrimp, peeled, deveined
  • Salt and cayenne pepper, to taste

Instructions:

  1. Combine all ingredients, except rice, shrimp, salt, and cayenne pepper, in slow cooker.
  2. Cover and cook on low 6 to 8 hours, adding rice during last 2 hours, and shrimp during last 10 minutes. Season to taste with salt and cayenne pepper
