Slow Cooker Vegetable Stew with Cheese Tortellini Recipes

Ingredients:

  • 1 can (141⁄2 ounces) each: stewed tomatoes, reduced-sodium vegetable broth
  • 1 cup each: sliced mushrooms, green bell pepper
  • 1⁄2 cup finely chopped onion
  • 1⁄4 teaspoon allspice
  • 1⁄2 teaspoon each: dried chervil and basil leaves
  • 4 small green or yellow zucchini, cubed
  • Salt and pepper, to taste
  • 1 package (9 ounces) fresh cheese tortellini, cooked, warm

Instructions:

  1. Combine all ingredients, except zucchini, salt, pepper, and tortellini, in slow cooker;
  2. Cover and cook on high 4 to 5 hours, adding zucchini during last 30 minutes.
  3. Season to taste with salt and pepper; serve over tortellini in shallow bowl
