- 2 tsp Dijon mustard
- 1/4 cup grated carrot
- 1/2 cup broccoli florets (small)
- 2 toasted whole-wheat English Muffins
- 1/4 cup roughly chopped red bell pepper
- 1/2 cup shredded Monterey Jack Cheese (Low Fat)
- Turn on oven (grill)
- Spread Dijon mustard over all sides of English Muffin and top with broccoli, carrots and bell peppers. Finish of with shredded cheese.
- Place under grill for a few min, or until cheese has melted.
