Slow Cooker Veggie Stew with Bulgur Recipes

Ingredients:

  • 1 can diced tomatoes,
  • 1 cup spicy tomato juice
  • 2 cups each: thickly sliced carrots, halved mushrooms
  • 1 cup each: chopped unpeeled Idaho potatoes, onion
  • 1 each: thickly sliced medium red and green bell pepper
  • 2–3 cloves garlic, minced
  • 1⁄2 cup bulgur
  • 1 teaspoon each: dried thyme and oregano leaves
  • 2 medium zucchini, cubed
  • 1 medium yellow summer squash, cubed
  • Salt and pepper, to taste

Instructions:

  1. Combine all ingredients, except zucchini, summer squash, salt, and pepper, in slow cooker;
  2. Cover and cook on high 4 to 5 hours, adding zucchini and summer squash during last 30 minutes.
  3. Season to taste with salt and pepper
