Ingredients

  • 1 Tablespoon Butter
  • 1 Yellow Onion, Diced
  • 2-6 Garlic Cloves, Minced
  • 1 Green Bell Pepper, Diced
  • 1 Red Bell Pepper, Diced
  • 5 Ounces Leans Ham, Chopped
  • 4 Cups Canned Black Beans
  • 64 Ounces Beef, Chicken Or Vegetable Broth
  • Salt And Pepper To Taste

Instructions

  1. Heat the butter to medium-high in a large soup pot. Add the onion, garlic and bell peppers and sauté 3-5 minutes until soft. Add the ham and stir until browned. Stir in the black beans, broth, salt and pepper and bring to a boil. Cover, lower the heat and simmer for 1 hour.
