Ingredients

  • 2 Tablespoons Butter
  • 1 Onion, Diced
  • 4-6 Garlic Cloves, Minced
  • 6 Carrots, Sliced
  • 3 Stalks Celery, Diced
  • 4 Cups Butternut Squash, Peeled And Chopped
  • 6 Cups Chicken Or Vegetable Broth
  • 1-3 Tablespoons Fresh Sage, Chopped
  • Salt And Pepper To Taste
  • 1/2 Cup Cream

Instructions

  1. Heat the butter to medium-high in a large soup pot. Add the onion and garlic and sauté 3-5 minutes until the onions are translucent. Add the carrots and celery and sauté another 5 minutes. Stir in the butternut squash, broth, sage, salt and pepper and bring to a boil. Lower the heat and simmer 25-30 minutes until the squash is tender. Remove from the heat and puree in batches with a blender or food processor. Return to your pot, stir in the cream and heat through.
